Tasting Embrace EVO oil is like hugging the wonderful land of long and precious olive-growing and gastronomic tradition that is Sicily in a big hug. Manual harvesting, the selection of the best olives, their immediate pressing (within 6 hours of harvesting) and extraction at a controlled temperature – everything to preserve the qualitative characteristics of the Nocellara del Belice cultivar, a typical variety of the Valle del Belice area.
The thorough direction of Carmen and Giusy, the two founders of Azienda Agricola Evo Sicily, is also shown by the attention put to their production techniques, which already granted their product a PGI (Protected Geographical Indication), the EU certified mark of origin. A special mention goes to the chosen packaging: the dark bottle Embrace EVOO comes in not only helps to perfectly shield the product from light, but it is also of great impact and elegance.

Embrace EVOO immediately strikes our nose with its scent of vegetables, enriched by notes of flowers and aromatic herbs aromas. Among all, starting with green vegetables we find flavour tones of bitter almond, fresh grass, green olive, walnut husk and lettuce; then follow hints of red tomato and tomato leaf. Mediterranean aromatic herbs can be found in the notes of basil and oregano; delicate aromas of chamomile flowers and light citrus fruits (lemon and tangerine) complete the olfactory analysis.

In the tasting analysis, Embrace EVOO shows a broad flavour bouquet of green notes of thistle, green almond, lettuce and green tomato, along with a light aroma of Mediterranean oregano. Bitterness is of medium intensity, and perfectly blends with a final feeling of pungency of higher intensity which helps to balance the taste and clean the palate.

Thanks to its green soul and hints of tomato, Embrace EVOO perfectly pairs to recipes made with fish or vegetables (vegan and vegetarian preparations, too); in addition to that, its strong and balanced feelings of bitterness and pungency makes it also excellent to go with meat-based main dishes.
Try Embrace EVOO on vegetable appetizers, raw vegetables in particular: pinzimonio, stuffed tomatoes (with mozzarella or bread), cucumbers and feta cheese, bruschetta with avocado and tomato, zucchini carpaccio, veggie skewers, and of course mixed salads.
Fish appetizers, made of sea fish and shellfish in particular, can also be enriched by EVOO Embrace – try it on salmon and avocado tartare, crostini with shrimp pâté, fish carpaccio, salmon or tuna pie.
Embrace EVOO is at its best when paired with fish-based main courses – try adding a drizzle of Embrace EVO oil a crudo to your grilled or stewed fish (e.g. octopus), steamed sea bass or cod, and impepata (mussels cooked with a good seasoning of pepper).
We chose to pair Embrace EVOO to a tasty summer recipe, typical of southern Italy: frisella (dry bread doughnut which is usually soften up with water) with red and yellow tomatoes, burrata (fresh cheese made of a mozzarella shield and a soft creamy heart) and marinated raw swordfish fillets; a rich drizzle of Embrace EVOO really helps in boosting the taste of the dish, enhancing the tomatoes aroma and gifting the preparation with green vegetable notes of flavours which bind all the other scents together.

Sicily
Sicily is one of the two main Italian islands, a land where every province, city and corner is unique. The southern part of the island benefits from a very hot climate, especially in summer – this confers products like the Pachino tomatoes a special taste. The presence of the majestic active volcano of Etna interrupts at times the quietness of the region, enriching the land with lapilli and singular substances which confer the products cultivated in the area their specific scent (you must try the singular “volcano wines” Etna PDO). The northern part is quite mild and people around the world appreciate its islands and turquoise sea, not to mention its stunning ancient cities where the time seems to be frozen to the years of Norman and Arab dominations.

Nocellara del Belice is an autochthonous Sicilian cultivar known for its EVO oils but also for table consumption of its olives (Nocellara del Belice olives are also a DOP product). Nocellara EVOOs have medium intensity and are rich in vegetal notes of flavour (almonds, green tomatoes and artichoke) and aromatic tones.
