The oil is marvellously lime in colour, with balanced yellow and green highlights. In the olfactory and gustatory analysis, “Le Selezioni Coratina” perfectly expresses the elegance and the strong impact of its cultivar: harmonic strikes of almond and grass flavours blow up in the mouth in all their importance. The strong presence of polyphenols is recognizable in the enjoyable prominent bitterness and pungency of this EVO Oil, a pair which represents the perfect combination to your bruschetta, legume soup, or even juicy Florentine-like steaks.

The oil appears of a lime green colour, with a balance of brilliant green and yellow highlights.

The oil has likeable and intense notes of fragrant olive fruit, and a richness of elegant perfumes of vegetables like almond, sweet green pepper, freshly cut grass, and thistle. Light yet spicy tones of white pepper are also notable, especially in the aftertaste.

Added after cooking, “a crudo”, the coratina supply important and pleasant bitter notes to every dish.

We have tried Le Selezioni Coratina with sliced steak and it was amazing!

The extra virgin olive oil manufactory LE TRE COLONNE is established in the town of Giovinazzo, near Bari. The 25 hectares owned by the company are equipped with an irrigation system which provides the correct water amounts to the 7000 cultivated olive trees (almost all centenarians!) of the plantation. Coratina, Ogliarola, Picholine and other Puglia’s small cultivars are the protagonists of the EVO Oil scene of the region.

Coratina is an olive cultivar typical of Puglia. It’s one of the cultivars with the highest concentration of polyphenols, organic molecules with natural antioxidant characteristics, which confers the oil its strong bitter and pungent notes.
