EVOO – Food pairing advice: Torrerivera

Torrerivera is a small reality of the Apulian Murgia: here typical cultivars of the area are grown, by organic methods, such as Peranzana or Coratina. Torrerivera creates monocultivar EVO oils that we recommend you to try. In our article we describe the monocultivar Peranzana by Torrerivera, an EVO oil which expresses with elegance and balance all those vegetable scents typical of the cultivar, enriching with some particular fruity scents.

Appearance & Visual Analysis

Torrerivera EVO oil shows a vivid lemon yellow color.

Scents & Olfactory analysis

At the olfactory level, Torrerivera EVO oil has a medium-light intensity, with a predominance of vegetable scents. Among all we recognize olive leaf, cut grass, green olive, lettuce, thistle, a light artichoke and green tomato. There is also a delicate mix of Mediterranean herbs, almond, pine nuts and a gentle scent of jujube.

Tasting: Aromas & Flavours

On the gustatory analysis, Torrerivera’s Peranzana EVOO is balanced in its bitter and pungent notes. Among the identifiable aromas we find artichoke, rocket, chicory, black pepper, almond, bay leaf and thyme. A delicate citrus scent of bergamot is also recognized.

Cultivar / Olive variety

Peranzana is a typical Apulian cultivar mainly grown in the Foggia province, in the areas of Torremaggiore, San Severo, San Paolo Civitate and Serracapriola in particular (i.e. Danuia and the upper Tavoliere delle Puglie). The oil yield is medium and Peranzana-based EVO oils have balanced bitterness and pungency, and typical hints of flavour of almond, artichoke and tomato.
