San Gimignano is world famous as “the city of towers”: as many as 72 raised on its hills in the period of the city’s maximum splendor, and 13 of them are still part of the panorama of the Tuscan hills of Chianti Classico today, a testament to that golden age.
Those who love EVO oil know how each bottle is “the child” of the territory which gives birth to it, and it could not be otherwise for Podere Vittoria organic EVO oil by Az. Agr. Torre di Ranza – immersed in a hilly landscape of delicate vegetable perfumes, it then almost unexpectedly raises in taste with its two “towers” made of pungency and bitterness.
Podere Vittoria extra virgin olive oil appears almost “shy” to the olfactory analysis, but then gives us an explosion of flavours in the palate during the tasting, expressing classic spicy and vegetable tones strongly ascribable to its cultivars.

In its elegant intensity of aromas, Podere Vittoria EVOO reflects the cultivars which give birth it: Moraiolo, Correggiolo and Leccino; indeed, in it we can find a predominance of vegetable, balsamic and spicy aromas: notes of artichoke, olive, chicory, broad bean, cut grass, and bitter almond, then followed by the spiciness of black and white pepper. Hints of aromatic herbs (bay leaves, sage and thyme) further enrich the scent of the EVO oil.

To the taste, Podere Vittoria EVO oil fills the palate with its bitter and pungent notes of medium intensity; the vegetable component already perceived to the olfactory analysis prevails once again with hints of artichoke, chard, rocket, chicory and bitter almond; then follows the very soul of the Moraiolo variety: deep aromatic herb flavours (e.g. bay leaf) and dark spices, including black pepper and a delicate scent of clove. Podere Vittoria organic EVO oil by Torre di Ranza is pleasantly ambivalent: with its delicate aromatic intensity and explosion of bitterness, it goes along dishes of great taste and character, including meat and soup; the pungency of the spicy sensation typical of its cultivars is particularly pleasant in the context of this special territory.
Excellent when added a crudo on mixed legume soups (lentils, beans, chickpeas and vegetables), Podere Vittoria EVOO goes well with this kind of dish, adding to it an even greater grit thanks to its depth in taste; without going too far from its production area, try it on Tuscan ribollita and winter minestrone.
Podere Vittoria EVO oil also goes well on first courses with meat as the main protagonist: baked pasta, pasta with turnips, egg tagliatelle with mushrooms and minced meat, and pasta with wild boar sauce.
Podere Vittoria EVOO is also an excellent companion for pizzas rich in flavor – some ideas for the toppings? Pumpkin spread and bacon, focaccia with pecorino cheese, prosciutto crudo and broad beans, 4 season pizza made with prosciutto cotto, mushrooms, olives and artichoke, and pizza with mortadella, ricotta and pistachio spread.
It is with meat that the culinary marriage to Podere Vittoria EVO oil becomes perfect, from that with white meat (poultry) to wild game – it is perfect on main courses such as stuffed quail, rabbit alla cacciatora, stewed wild boar or stuffed chicken rolls, pork fillet in sauce, turkey breast strips.
We have chosen to combine Podere Vittoria to an excellent meat cut – the skirt steak, tasty and affordable. The farm is located on the hills surrounding San Gimignano, on the road which leads to Volterra.
Plunged in these beautiful and evocative hills, with an extension of about 40 hectares of property, we produce DOCG wine. The head of the company is the young agrarian expert Alberto Governa, wine grower who works for it diligently and with zeal. From the careful cultivation of our olive grove, of the qualities “Moraiolo,” “Correggiolo” and “Leccino,” the olives, gathered by hand and selected, are cold-pressed producing “extra virgin olive oil”.
